This recipe makes a quick, nutritious dinner and great leftovers for lunches.

Here’s what you need and how to make:

Ingredients

1 lb ground chicken or ground turkey
1 egg
1/4 cup plain whole wheat bread crumbs or ground crackers (crackers like Simple Mills, Mary’s Gone Crackers or Dr. Kracker’s)
2 Tablespoons pesto
2 Tablespoons Parmesan
3 scallions, chopped (optional)
2 teaspoons garlic powder
1/2 teaspoon salt
1/4 teaspoon ground pepper
2-3 second spray avocado oil

Directions

1. Set oven to broil on high.

2. In a large mixing bowl, combine ground meat, egg, pesto, parmesan cheese, cracker crumbs, scallions, sea salt, garlic powder and black pepper.

3. Form meatballs into golf ball sized balls (makes about 24) and lay out on a parchment-lined baking sheet.

4. Spray meatballs with avocado oil spray and broil for 10-12 minutes.

Serve with spaghetti squash, zucchini noodles, edamame or chickpea pasta or paired with brown rice and veggies.
