Quick meatballs that are packed with protein, fiber and vegetables.


For the meatballs:
1 lb ground chicken or ground turkey
1 egg
1 teaspoon sesame oil
1/4 cup whole wheat bread crumbs or cracker crumbs
1 medium head of broccoli, finely chopped
4 scallions, chopped
2 teaspoons garlic powder
1/4 teaspoon ground ginger
1/2 teaspoon grated fresh ginger
1/2 teaspoon salt
1/4 teaspoon ground pepper
2-3 second spray avocado oil

For the sauce:
1/3 cup Hoisin sauce
1 Tablespoon rice wine vinegar
1 Tablespoon soy sauce
1/2 teaspoon sesame oil
1/2 teaspoon ground ginger
1 garlic clove, grated or minced


1. In a large mixing bowl, combine chicken, egg, sesame oil, bread crumbs, broccoli, scallions, sea salt, garlic powder, ground ginger, fresh ginger and black pepper.

2. Form into golf ball size meatballs and lay out on a parchment-lined baking sheet. Spray with with Chosen Food’s avocado oil spray and broil for 12-15 minutes.

3. Whisk together all of the sauce ingredients. Once meatballs are cooked, dip each meatball lightly in the sauce.

Serve with brown rice, stir fried vegetables, Trader Joe’s vegetable fried rice or on top of a bed of salad greens!
