You will love this simple summer salad. No strawberries? Substitute for any fresh berries or stone fruit like peaches and nectarines. Not a fan of goat cheese? We also love blue cheese or feta. And once you try these homemade croutons, you’ll want to buy all the stale bread to make these crunchy salad toppings on repeat.

Here’s what you need and how to make this delicious summer salad:

Ingredients

4 Cups mixed greens and/or spinach

1 pint Organic strawberries

2 oz goat cheese

1/4 Cup pecans

1/4 loaf french bread, sourdough loaf or baguette

4 Tablespoons extra virgin olive oil

1 Tablespoon vinegar of choice (balsamic, red wine, champagne)

1 teaspoon Dijon mustard

Drizzle of honey (optional but balances out the tang)

Sprinkle of salt and fresh cracked pepper

Directions

1. To prepare croutons, preheat oven to 350°, tear up bread, drizzle with 2 Tablespoons olive oil and bake for 15 minutes until golden and crispy. Sprinkle with flaky sea salt (optional).

2. Combine greens, strawberries, goats cheese, pecans and cooled croutons in a large bowl.

3. To prepare vinaigrette, combine 2 Tablespoons olive oil, vinegar, mustard, honey, salt and pepper.
