These roasted sweet potatoes are nutrient and fiber rich, super simple and great as leftovers throughout the week.
2-3 sweet potatoes
Sea salt or pink Himalayan salt
1. Preheat oven to 400°
2. Peel sweet potatoes.
3. Cut into 1/2” round slices.
4. Spray a sheet pan with avocado oil. Place sweet potatoes in a single layer on the cookie sheet. Spray top side of sweet potatoes with avocado oil. Bake for 40-60 minutes flipping potatoes every 20 minutes. Finish by seasoning with salt.
Serve as a side dish to burgers or eat leftovers with eggs.
