Gluten free and guilt free these pancakes are perfect to prep early in the week. Enjoyed on their own (seriously delicious without syrup) or served with berries, nut butters or real maple syrup. Cook ahead of time, cool and refrigerate. In the morning, pop in the toaster for 1-2 minutes.

Ingredients

1 cup oat flour (blend or food process rolled oats)
1 teaspoon baking soda
1 teaspoon cinnamon
1 Tablespoon butter, melted
2 eggs
2 bananas, mashed
1 teaspoon honey


Directions

  1. Mix oat flour, baking soda and cinnamon in medium bowl.
  2. In small bowl, combine melted butter, eggs, bananas and honey.
  3. Add wet ingredients to dry ingredients and stir to combine. Do not over mix! Let sit for 10 minutes.
  4. Cook pancakes over medium heat. Enjoy!
