This lemony loaf is guaranteed to brighten your day.


2 Cups all-purpose flour
1 Cup sugar
2 Tablespoons poppy seeds
1 Tablespoon baking powder
½ teaspoon baking soda
½ teaspoon salt
2 Tablespoons ground flax seeds (optional)
1 ½ Cups plain whole milk yogurt (any % fat and flavored yogurt will do – vanilla, lemon, coconut)
2 Tablespoons fresh lemon juice (1 lemon)
1 ½ Tablespoons grated lemon zest (2-3 lemons)
1 teaspoons vanilla extract
2 large eggs
8 Tablespoons butter, melted and cooled or 1/2 Cup oil


1. Preheat oven to 375° degrees.

2. Whisk flour, sugar, poppy seeds, baking powder, baking soda, salt and ground flax seeds together in a large bowl. In a separate bowl, whisk yogurt, lemon zest, vanilla extract and eggs until smooth. Gently fold yogurt mixture into flour mixture until just combined. Fold in melted butter or oil. Do not overmix.

3. Grease or oil a loaf pan. Pour batter in loaf pan and bake for 50-60 minutes, rotating pan 1/2 way through cooking, until golden brown and toothpick inserted in the center comes out clean.
