Here’s what you need and how to make Kale Caesar Panzanella!
The secret to tender kale is type (dino kale) and massaging kale with olive oil and pink salt!
Ingredients
Caesar salad dressing (Organic Girl and Brianna’s Fine Salad Dressings are great choices!)
1 Baguette or french bread
2-4 garlic cloves
2 Tablespoons butter (Kerry Gold USA) and/or extra virgin olive oil
1 teaspoon olive oil
1/4 teaspoon pink Himalayan salt
1/4 cup Parmesan cheese
1/2 lemon
Cracked pepper
Dino kale (aka latino kale) or sub other kale (Dino kale is the most tender)
Directions
1. Cut bread into small, bite sized pieces – about 1/4” pieces). In a large skillet, heat butter and/or olive oil over medium heat. Crush whole garlic cloves and add to the skillet with bread. Stir every 2-3 minutes for 10-15 minutes, or until browned. Cool completely.
2. De-stem kale leaves and cut into small pieces. Add kale to a large bowl with 1 teaspoon olive oil and 1/4 teaspoon pink Himalayan salt. Massage (yes, massage) kale for 2-3 minutes. Squeeze 1/2 lemon and massage for 1 minute. Dress with Caesar salad dressing, Parmesan and add croutons. Season with fresh cracked pepper.
