I’m sharing my dinner plans for cooking at home on Valentine’s Day, as well as the recipes and grocery list you need to make an unforgettable evening. This date idea is not limited to Valentine’s Day – enjoy a night in the kitchen with your loved one, family or friends year-round!

Beet and Goat Cheese Salad

Let’s start with the salad. First, you’ll want to make the salad dressing. In a small bowl or jar, mix together 3 Tablespoons extra virgin olive oil, 3 Tablespoons red wine vinegar, 1 teaspoon Dijon mustard, ¼ teaspoon salt & few grinds of freshly cracked pepper. If you like spice, add ½ teaspoon red pepper flakes.
Make a bed of mixed salad greens. Top with precooked beets, sprinkle with crumbled goat cheese and lightly drizzle with dressing.

Homemade Pizza

Preheat oven to 500°. Form dough into a pizza crust and place on a cookie sheet. Top with dried oregano, tomato sauce, mozzarella cheese and toppings of choice. Favorite combinations include:
Fresh basil + ricotta or burrata cheese + cherry tomatoes
Spicy sausage + bell peppers + onions
Pepperoni (nitrate and nitrite free) + pineapple + jalapeno slices
Bake pizza for 12-15 minutes or until crust is lightly brown.


Fresh Berries with Balsamic Vinegar

Wash berries and place in a bowl. Drizzle with balsamic vinegar. Optional, but highly encouraged, pair with vanilla bean or strawberry ice cream.

You need:
Precooked beets (Love Beets, Trader Joe’s)
Mixed salad greens
Fresh berries
Fresh pizza dough (refrigerated or bakery) or cauliflower pizza crust (frozen)
Pizza toppings (see combination ideas)
Dried oregano
Canned tomato sauce
Mozzarella cheese
Goat cheese
Balsamic vinegar
Red wine vinegar
Dijon mustard
Vanilla bean or strawberry ice cream
