Yep – you read that right! Not your average banana bread, this baked oatmeal uses spotty bananas and has the distinctive cinnamon crumble from a coffee cake. This recipe is super simple and a great make ahead breakfast or snack. You need to prep this asap!

Ingredients

2 Cups quick cook Organic oatmeal
2-3 mashed bananas
3/4 Cup milk or alternative milk
2 eggs
1/4 Cup real maple syrup
5 oz Greek or Icelandic yogurt plain or flavored
1 teaspoon vanilla extract
1/2 teaspoon baking powder
1 teaspoon cinnamon
1/4 teaspoon salt
1/3 Cup whole wheat flour or alternative flour like ground oats or almond flour
1/3 Cup butter or coconut oil
2/3 Cup packed brown sugar

Directions
1. Preheat oven to 350°. Line a baking dish with parchment paper and spray with avocado oil spray.

2. In a large mixing bowl, combine oats, bananas, milk, eggs, maple syrup, yogurt, vanilla, baking powder, cinnamon and salt. Pour in to the prepared baking dish.

3. In a small bowl, combine flour, butter and brown sugar. Sprinkle evenly over the first layer.

4. Bake for 30 minutes until the oatmeal has set and is slightly brown and bubbly on the edges. Enjoy!
