Breakfast for lunch and dinner is a quick 5-minute meal with minimal clean up.

Ingredients

2 eggs

1/4 teaspoons butter or avocado oil spray

Handful arugula (substitute spinach or baby kale)

1/4-1/2 avocado

Everything but the bagel seasoning

Whole wheat tortilla

Directions

1. Heat a small pan over medium heat. Scramble eggs in a bowl. Add butter or avocado oil spray to the pan. Add eggs to the pan and cook for 1-2 minutes until done. Remove pan from heat.

2. Warm tortilla over the open flame of a stove using tongs or heat in pan.

3. Fill tortilla with eggs, greens, avocado and seasoning.

Enjoy for breakfast, lunch or dinner.
