Q: I love Mexican food, but it can be so heavy. What’s the best choice at a Mexican restaurant?

A: The issue with Mexican food tends to be the amount of carbs per meal. While it’s easy to have 2 margaritas, a basket of chips, cheese enchiladas AND rice and beans, that’s quite the carbohydrate load for your pancreas to handle. Instead, choose a couple of your favorites to enjoy. Do you want the chips, the rice and beans, the margaritas OR the tortillas. I am a huge margarita fan, so I would choose a margarita instead of chips, rice or tortillas any day. Healthier entrees include fajitas, chicken tortilla soup, taco salad out of the shell or fish tacos, but the same principles apply.
