Filled with veggies and fiber, these flavorful chicken meatballs take less than 30 minutes to make. Broiled for 15 minutes instead of fried or baked, these meatballs are quick on time and simple enough to add to your weeknight routine. They can be served with marinara sauce on spaghetti or zucchini noodles, topped on a bed of salad, dipped in ketchup or eaten on their own!

Ingredients

1 lb ground chicken or ground turkey

1 egg

1/4 cup bread crumbs or ground crackers

1/4 cup grated Parmesan cheese

1 small head of broccoli

3 scallions

2 teaspoons garlic powder

1/2 teaspoons sea salt

1/4 teaspoon black pepper

Avocado oil spray

Directions

1. Preheat oven to broil on high.

2. In a large mixing bowl, combine all ingredients except avocado oil spray.

3. Form mixture in to golf sized balls and place on a parchment-lined baking sheet.

4. Spray with avocado oil spray and broil for 15 minutes.
